A Healthier Chicken And Broccoli

I was craving some chicken and broccoli the other day and I wanted to try and make it at home. I did it! The photo above was the result. Jeff loves ordering Chinese food, but I’m not a big fan of takeout. Why order when I can just whip something up, and save us some money?
I recently purchased an Asian marinating sauce from Costco and it’s great for my Asian Saturdays. The sauce is called Mr. Yoshida’s Marinade and Cooking Sauce. I like it. It’s not too sweet and perfect for marinating meat. So, how did I make this plate, you ask?
To make the rice
White rice (whichever brand you prefer)
Extra virgin olive oil
Chicken and broccoli
Fresh/frozen broccoli (I prefer fresh)
Three uncooked chicken breasts
Mr. Yoshida’s Marinade and Cooking Sauce
What to do:
Get the rice going first.
Warm up your pot/turn on your crockpot. Add two cups of rice to your pot, two cups of water, a tablespoon of extra olive oil and a dash of salt for flavor.
Now, it’s off to the chicken and broccoli!
I like to start with warming up the pan. Let it warm up for about 2-3 minutes, depending on your stove. Add the chicken breasts to the pan. When the chicken begins to look white, chop it in 2 or 3 inch sizes (as shown in image above). Then add the broccoli.After 5-10 minutes (again, depending on your stove), add a top-filled amount of Mr. Yoshida’s Marinade and Cooking Sauce. Top-filled meaning use the top of the container as a measurement. If you’re using the big bottle, one top-filled amount is enough. If it’s a smaller bottle, use three top-filled. Add a cup of water and a tablespoon of sugar. Stir and let it cook for 10 minutes on med-low.
