I love making appetizers and side dishes with my meals from time to time. One of the easiest to make is fried platains. These are twice-fried green plantains. I love making these at home — or eating them from my parent’s house — because I know they enjoy making these as well.
What you will need:
Small plate (ceramic or glass)
Sea salt/regular salt
What to do:
Place the frying pan on the store at medium-high heat with about a 1 1/2 cups of Canola oil. You will need to peel the plantains. I stick to one or two plantains for Sebastian and I since Jeff does not eat plantains. Cut the plantains into slices. Then, place the plantains in the frying pan. Set up the bowl/round plate for cooling purposes and place a paper on top of the plate. This will help soak up the oil. Wait until the plantains are golden (no longer that pale, uncooked color) and place them on the cooling plate.
Now this is where it gets fun! Take the small plate and plate it over one plantain to smash it. Do not do it too hard, the key is to flatten them up enough where you can still pick them up and fry them again.
Place the mashed plantains back in the frying pan and wait until they harden and become crispy. I like to give them about a minute to a minute and a half. Once they are done, you can move them back to the cooling plate and sprinkle a small dash of sea salt/regular salt.
